White tea, like black, green, and oolong teas, comes from the same plant. However, the leaves are processed differently. For white tea, the youngest buds are harvested before they open and dried immediately to prevent oxidation. Oxidation is what distinguishes the different tea types. White tea is the least oxidized, followed by green, oolong, and finally black tea, which is fully oxidized, resulting in its dark color.
